Feeling Like Fall

It has been getting cooler in the mornings and evenings here. It stayed at a fairly constant 56 degrees today, with clouds and rain most of the time. I wish I could send some of that to California. They need the rain more than we do right now. Keep them in your prayers.

It's feeling more like the type of autumn I grew up with, and that means it's time to layer with sweaters and make soup. I'd love to smell someone burning a fire in their fireplace. Mmm.


Our church Life Group met at our home and had baked potatoes on Sunday evening. They were really good! A few people from our group were either sick or could not make it, so there were some leftover spuds which were given to me.

I think I will make baked potato soup tonight. J is having to work late and that means I should have time to get everything made... if I hurry.

I found a few soup recipes on my go-to site Allrecipes.com, and I also was offered recipes from two ladies who were here on Sunday. I'll gladly take them!


Here is one I found that got great ratings.

Baked Potato Soup I

Yields: 6 servings (You can scale the quantity on the website - a feature I love!)

"This soup incorporates pre-baked cubes of potato with onion, crumbled bacon, cheddar cheese and sour cream in a milk soup base which has been thickened with a roux."

INGREDIENTS:

12 slices bacon (I'm not going to use that much, because I'm not a big bacon fan.)
2/3 cup margarine
2/3 cup all-purpose flour
7 cups milk
4 large baked potatoes, peeled and cubed
4 green onions, chopped
1 1/4 cups shredded Cheddar cheese
1 cup sour cream
1 teaspoon salt
1 teaspoon ground black pepper

DIRECTIONS:

1. Place bacon in a large, deep skillet. Cook over medium heat until browned. Drain, crumble, and set aside.
2. In a stock pot or Dutch oven, melt the margarine over medium heat. Whisk in flour until smooth. Gradually stir in milk, whisking constantly until thickened. Stir in potatoes and onions. Bring to a boil, stirring frequently.
3. Reduce heat, and simmer 10 minutes. Mix in bacon, cheese, sour cream, salt, and pepper. Continue cooking, stirring frequently, until cheese is melted.

This recipe appears in the Allrecipes "Tried & True Quick & Easy" cookbook.

Hey, Hol!

I'm with you on enjoying the cooler weather! Ours is getting down to the 40s at night, but up into the 80s during the day. Makes it hard to dress in the morning!

I am anxious for the weather to cool off so I can use my oven more. I try not to use it during the warmer months. So, all of those great baked things are awaiting us! I especially like homemade chicken pot pie. And Stouffer's Veggie Lasagna. Not homemade, but delicious!

I also like to get out my chili fixin's and soups. Those aren't summer fare at our house, either, unless someone is ill.

My breadmaker doesn't do bread well any more, so I might even try some in the oven. That's kinda industrious for me, though!

We actually went over to my aunt's last night to get our haircut and she had a fire going, it was very nice. I also love getting to wear big comfy sweatshirts. :)

I'm going to make your potatoe soup recipe, looks yummy. We make homemade chili at our house when it get's chilly (notice I didn't say cold, because it never really get's cold, not like your used too).
